Do you have some leftover giblet gravy (preferably cream based and not brown based)?  Then I have a wonderful surprise for your leftover.  With very few additions, you can turn your giblet gravy into a quick, hot and hearty soup to warm you you right up!

INGREDIENTS

1-2 cups of leftover cream-based giblet gravy

1 cup of milk or turkey broth or chicken broth

1 cup of cooked carrots, cubed or sliced

1 cup of boiled potato, cubed

Fresh or frozen lemon balm, chopped or parsley chopped

Salt and pepper to taste.

PREPARATION

  1. Boil till just fork-tender, you potatoes and carrots.  Reserve veg broth.
  2. In another pan add your leftover giblet gravy and 1 cup of milk  + broth.  Add more broth or milk, if a thinner soup is desired.
  3. Add your freshly chopped herbs or toss in your frozen herb cube.
  4. Simmer over medium heat until heated through and steaming.

Serve with fresh Artisan bread and butter and a nice glass of your favorite wine.
