Thanksgiving Soup

Do you have some leftover giblet gravy (preferably cream based and not brown based)? Then I have a wonderful surprise for your leftover. With very few additions, you can turn your giblet gravy into a quick, hot and hearty soup to warm you you right up!
INGREDIENTS
1-2 cups of leftover cream-based giblet gravy
1 cup of milk or turkey broth or chicken broth
1 cup of cooked carrots, cubed or sliced
1 cup of boiled potato, cubed
Fresh or frozen lemon balm, chopped or parsley chopped
Salt and pepper to taste.
PREPARATION
- Boil till just fork-tender, you potatoes and carrots. Reserve veg broth.
- In another pan add your leftover giblet gravy and 1 cup of milk + broth. Add more broth or milk, if a thinner soup is desired.
- Add your freshly chopped herbs or toss in your frozen herb cube.
- Simmer over medium heat until heated through and steaming.
Serve with fresh Artisan bread and butter and a nice glass of your favorite wine.
